Growing up on the coast of California introduced me to a variety of seafoods growing up. One that I particularly didn't have a taste for yet was mussels. Now that i'm and adult I have come to cherish the sweet salty taste of mussels. To me mussels are a delicacy because of the work that goes into prepping them. Often times people will solely order them out because of the smell and work that one must endure. While the process is tedious it can also be a learning experience of patience in the kitchen. The best meals require time, effort, and sacrifice; this meal combines all three to create one of the most savory meals in the world.
Ingredients
4 pounds of mussels, rinsed and any that are broken or open thrown away
8 slices bacon, cut into one inch pieces
2 leeks, rinsed and sliced (white and light green parts only)
1 1/2 cups white wine
Pinch of sea salt
3 tablespoons soft butter
Chopped parsley
1 lemon
Baked bread
